Quick colourful cabbage couscous

Todays meatless monday is a super yummy quick couscous salad. Delicious served on it’s own, with condiments (listed below) OR as a side to your favourite protein, on a different day of the week!

What you need

1 cup of couscous

200ml vegetable stock, warm

400g can of chickpeas, drained

Juice from 1 lemon

100g of both red and white cabbage, shredded

50g of grated carrot

1 1/2 tsp of harrisa

1 handful of pomegranate seeds

what you do

Put couscous in a  bowl with the harrisa, pour over the warm stock, mix and cover.

five minutes later, fluff with a fork, add chickpeas, lemon juice, cabbage, carrot and season. Top with pomegranate seeds and enjoy!


I served this with pitta bread, olives, tzatziki, hummus and pickled green chillies
